SWEET POTATOES
GRATED SWEET POTATOES
INGREDIENTS:
Cooking oil
2-3 sweet potatoes (washed)
Salt & pepper to taste
DIRECTIONS:
Preheat oven to 350* F.
Peel, then grate sweet potatoes.
Mix sweet potato shreds with cooking oil, salt and pepper.
Oil two baking sheets.
Spread sweet potato shreds across the two baking sheets.
Sprinkle with salt and pepper.
Bake for 20 minutes or more for crispier pieces, stirring whenever some pieces start getting too cooked.
SLICED SWEET POTATOES
INGREDIENTS:
Cooking oil
2-3 sweet potatoes (washed)
Salt & pepper to taste
(optional) ½ c. cheese
DIRECTIONS:
Preheat oven to 350*F.
Peel sweet potatoes.
Slice sweet potatoes into ¼ inch thick circles.
Oil 2 baking sheets.
Spread sweet potato slices in a single layer across the two baking sheets.
Sprinkle with salt and pepper to taste.
Bake for 20 minutes, flipping halfway through.
(optional) Sprinkle cheese over sweet potatoes, put back in oven, and turn the oven off. Leave for 5 minutes or until cheese is melted.
