POTATO SOUP

INGREDIENTS:

3 T olive oil 

1 large onion, chopped 

2 garlic cloves, minced 

1 t red curry powder 

1 t onion powder 

1 t garlic powder 

¼ t ground black pepper 

¼ t salt, more to taste 

1 q. chicken/vegetable broth 

3 potatoes 

½ c yogurt (optional) 

DIRECTIONS:

  1. In a large pot, heat oil over high heat until hot and shimmering. Add onion and garlic, and sauté until golden, about 4 minutes. 

  2. Stir in red curry powder, onion powder, garlic powder, black pepper and salt, and sauté for 2 minutes 

  3. Add broth, 2 cups water and potatoes. Bring to a simmer, then partially cover pot and turn heat to medium-low. Simmer until potatoes are soft, about 20 minutes.  

  4. Add yogurt (optional). 

  5. Using an immersion blender, puree the soup. Taste, and add salt if necessary.
