POTATOES
SMASHED POTATOES
INGREDIENTS:
1 bag baby potatoes (washed)
Cooking oil
Salt & pepper to taste
(optional) ½ c. cheese
DIRECTIONS:
Preheat oven to 350 degrees F.
Boil the potatoes until soft. Then pour into a colander.
Oil two baking sheets.
Dump the potatoes across the two baking sheets.
Using the bottom of a drinking glass and a piece of parchment paper, smash each potato, covering the pan from edge to edge.
Spray with oil and sprinkle with salt and pepper.
Bake for 20 minutes (or broil for less time), until the potatoes start to crisp up.
(optional) Sprinkle cheese over potatoes, put back in oven, and turn the oven off. Leave for 5 minutes or until cheese is melted.
GRATED POTATOES
INGREDIENTS:
Cooking oil
2-3 potatoes (washed)
Salt & pepper to taste
DIRECTIONS:
Preheat oven to 350 degrees F.
Grate potatoes.
Mix potato shreds with cooking oil, salt and pepper.
Oil two baking sheets.
Spread potato shreds across the two baking sheets.
Sprinkle with salt and pepper.
Bake for 20 minutes or more for crispier pieces, stirring whenever some pieces start getting too cooked.
SLICED POTATOES
INGREDIENTS:
Cooking oil
2-3 potatoes (washed)
Salt & pepper to taste
(optional) ½ c. cheese
DIRECTIONS:
Preheat oven to 350 degrees F.
Slice potatoes into thin circles or half circles.
Oil two baking sheets.
Spread potato slices in a single layer across the two baking sheets.
Sprinkle with salt and pepper.
Bake for 20 minutes, flipping them over part way thru.
(optional) Sprinkle cheese over potatoes, put back in oven, and turn the oven off. Leave for 5 minutes or until cheese is melted.
